French and Mediterranean Cooking with Chef Xavier Btesh




One of my dream destination will be Italy. Dreaming of having some wine with my husband and enjoying a nice sumptuous lunch or dinner while being mesmerized by the enchanting view but enough of those days dreaming since it's like I already went there when  I met and attended a  French and Meditteranean cooking class with Chef Xavier Btesh at The Maya  Kitchen last Saturday.

Chef Xavier Btesh was born and raised in Paris.He was also trained under renowned chefs. He also becomes a consultant chef of various businesses. His book Les Petits Diner de Xavier sold more than 40,000 copies across Europe. 

He told us that French cooking is just the same with our Filipino style cooking. It is simple, easy and not complicated.
For the Culinary Elite Series, Chef Xavier Btesh did a cooking demo of various and well-known French-style dishes from his cookbook, French Kusina. 


Marseille Seafood Soup
The Seafood Soup is really flavorful. I can really taste every ingredient that was on it. It is perfect for the rainy day season. It will totally warm up your body.

Salad Nicoise
It was an easy to prepare salad. This one is so perfect if you have an expected guest. Just grab some fresh tomatoes, bell pepper, french beans ( one of my favorite), tuna chunks or anchovies with red wine vinegar and olive oil.

Boeuf Bourguignon
 I thought stew is really complicated but after watching how Chef Xavier cooked this one, I was really interested in doing his recipe at home. The beef was so tender and while it's cooking, I can really smell it.



Authentic Pasta Carbonara
 I was used to eating Carbonara with mushroom and cream but Chef Xavier told us that the Authentic Pasta Carbonara is not creamy and the only ingredients that will be add on the pasta are cheese and black pepper and some pasta water.

Milanese Risotto
For sure if you are visiting my page or you are one of the people who are close to me, you'll know that I haven't tried cooking Risotto before. I think Risotto is a bit complicated and will hard to achieve the desired taste but Chef Xavier's Risotto recipe is not too complicated.

My lunch 
After the cooking demo, I was able to taste all those delicious French and Mediterranean  dishes prepared by Chef Xavier. After attending this cooking demo I become curious on what other French dishes I can cook and prepare for my family. I've learned some cooking tips and some facts about the French dishes.

A quick trip down holiday memory lane

  Can you feel it? The cold breeze, holiday songs, festive decorations, and colorful lights and lanterns… it’s Christmas season, everybody! Filipinos are known to celebrate Christmas the longest – it starts with the BER months and ends in January. Along with parties and get-togethers, we also have different traditions to celebrate the yuletide season. Since I was a kid, I associated grapes and round fruits with the holiday season. My grandma used to buy a lot of grapes during the BER months and placed them on our table along with other fruits.
