Shrimp and Brocolli Pasta with Lemon

Pasta has been one of the dish that us Filipinos love and admit it or not we also love to create our own pasta dishes at home that we can share to our family and friends
Pasta is one of the dish or snacks at home.

There are different kind of pasta sauce, some are using white sauce, red sauce, pesto sauce and other sauces for pasta but are you aware that we can also make an amazing pasta dish using lemons as the sauce. Lemons are the good source of vitamins C, vitamin A, Vitamin E, zinc, calcium, iron, protein and other nourishing elements. Lemons contain antioxidant and cancer-fighting properties.

Last week, I was invited to be one of the finalists of  Shopwise The Big  Cook-Off Challenge held at Shopwise, Sucat. The theme was " Pasta Around the world". We are asked to make our own pasta recipe. That was the first time I cooked the Shrimp and Broccoli Pasta with Lemons.

This recipe is good for 2-3 persons.

Ingredients:

-250 grams of fettuccine pasta
-1L  water
-250 grams Fresh medium Shrimp, peeled
 and deveined
-1 cup Fresh Brocolli
-2 pcs of lemon ( for lemon juice and
 garnish)
-1 small red bell pepper ( minced )
-1/2 teaspoon oregano
-4-5 pcs of bacon ( bits )
-3 cloves of garlic ( minced )
-2 tbsp of olive oil
-2 tbsp of rock salt
-1/4 cup freshly grated Parmesan
  cheese
-salt and ground pepper to taste

Cooking Directions:

1.  In a medium-sized pot, add 1L of
water and a dash of salt  and bring
to boil to Cook the pasta according
to the packaging instructions or
until Al Dente
2. On a separate stove, pan fry
bacon bits until crispy golden brown texture is achieved then set
aside.

3. the same pan, saute bell pepper
til' it caramelized, add minced
garlic then add shrimp and saute
until we achieve the orange color
from the shrimp then bring it to
low fire.

4. add broccoli and stir-fry for about
2-3 minutes to retain some  crisp
from the vegetable.

5. Add lemon zest ( 1 lemon ), parsley,
lemon juice then add pasta, parmesan
add some salt and  pepper to taste
then toss well

6. Transfer it in a nice plate and top
it with bacon bits and sprinkle some
more parmesan cheese, garnish with
some basil and lemon then serve.
