I’ve
noticed that more and more Filipinos are eating and including blueberries in
their meals. I must admit, I’m a fan of blueberries myself! The enticing
bluish-purple hue of this berry will surely catch your attention.
The
balance of the sweet and tart makes blueberries perfect for desserts like
cheesecakes, muffins, and ice cream, as well as jams, dressings, and sauces.
Yummy treats to tickle the taste buds!
More
than the taste, blueberries are low in calories but high in nutrients. A serving
of raw blueberries, which is about 140 grams, only has 80 calories! A healthy
and delicious way to snack.
Blueberries
are excellent sources of manganese and Vitamin K for bone metabolism and
development. They also provide vitamin C for a healthy immune system and
dietary fiber for heart health.
Although
fresh blueberries are only found in stores from May to September, we can still
enjoy them in frozen and canned forms. I recommend blueberries from the U.S.,
of course! There are several frozen and canned USA Blueberry brands in the
market, so be sure to bring that blue love home on your next grocery visit!
Christmas
Menu
Aside
from decorating our homes and wrapping gifts, I’m sure you’ll agree that one of
the most time-consuming activities of the Christmas season is planning,
prepping, and cooking our holiday menu.
Traditional
Noche Buena dishes like the Lechon, fruit salad, Relleno, morcon, sweet ham,
and bibingka will always be part of our family’s Christmas Eve dinner. But this
time, I decided to include two healthy blueberry recipes! They’re colorful,
vibrant, and 100% tasty. Oh, and they’re easy to make, too!
Ingredients:
Mixed
Greens (your choice of arugula, romaine, spinach, kale, etc.)
Strawberries
and Kiwis (or your preferred fruit)
Frozen
USA Blueberries
Dressing:
1
cup frozen USA Blueberries
2
teaspoons Honey
3
tablespoons Greek Yogurt
Preparation:
1.
Thoroughly wash the greens, strawberries, and kiwis. There’s no need to wash
the frozen blueberries.
2.
Transfer in a bowl and set aside. If the strawberries are too big, cut them in half
or quarters.
3.
Place all ingredients of the dressing in a blender, and blend until smooth
and thick.
4.
Drizzle the dressing into your greens. Top with the fruits.
5.
Serve with more dressing and fruits on the side.
This
fresh and fab salad is a wonderful addition to Christmas dinner!
My
next recipe is a mouth-watering dessert, perfect after a satisfying meal. It’s
guilt-free and enjoyable to make. Kids of all ages will love it!
Gluten-Free Cookies and Berries Parfait |
Ingredients:
2
cups Gluten-Free Cookies
1
cup Greek Yogurt
1
cup canned USA Blueberries
1
tablespoon Honey
Preparation:
1. Crush
the cookies. Set this aside.
2. In
a small pan, simmer the blueberries and honey for about a minute.
3. Remove
from heat and allow to cool down.
4. In
a nice, transparent cup or wine glass, layer your cookies, yogurt, and blueberry
sauce.
5. Top
with fruits of your choice.
