Ingredients : 1 small napa cabbage 1/4 salt Water  3 cloves  grated garlic  1 teaspoon grated ginger  1 teaspoon sugar 1 to 2 tablespoons  of water  1 to 5 tablespoons red pepper   Scallions or Onion chives Procedure : 1.Cut the cabbage lengthwise and remove the cores. Cut each quarter crosswise into 2-inch-wide strips. 2.Place the cabbage and salt in a large bowl.
