Easy To Prepare Kimchi




Kimchi is always serve as side dish in every korean food. Its like the atshara or bagoong that Filipino love.
I enjoyed eating kimchi with rice and pancakes, I decided to make myvown version of a homade kimchi though it's not like the original taste of the Authentic Kimchi, I can say it's the same taste with the one you can buy in the supermarket.



Ingredients:

1 small napa cabbage
1/4 salt
Water 
3 cloves  grated garlic 
1 teaspoon grated ginger 
1 teaspoon sugar
1 to 2 tablespoons  of water 
1 to 5 tablespoons red pepper  
Scallions or Onion chives


Procedure:

1.Cut the cabbage lengthwise and remove the cores. Cut each quarter crosswise into 2-inch-wide strips.

2.Place the cabbage and salt in a large bowl. Massage the salt into the cabbage until it soften a bit, then add water

3.Rinse the cabbage under cold water 3 times and drain in a colander for 15 to 20 minutes



4.Combine the garlic, ginger, sugar , 2 tablespoons water in a small bowl and mix to form a smooth paste then add Red Pepper powder.Adjust it on how spicy you like your kimchi.

5.Combine the vegetables and paste

6.Mix it using  your hands( Use gloves) Make sure the paste gets into the vegetables until they are thoroughly coated. 
7. Taste it

8.Let it ferment  at room temperature for 1 to 5 days. You will see bubbles inside the jar .

9.When its ready put it in the fridge.Eat it after 1- 2 weeks

A quick trip down holiday memory lane

  Can you feel it? The cold breeze, holiday songs, festive decorations, and colorful lights and lanterns… it’s Christmas season, everybody! Filipinos are known to celebrate Christmas the longest – it starts with the BER months and ends in January. Along with parties and get-togethers, we also have different traditions to celebrate the yuletide season. Since I was a kid, I associated grapes and round fruits with the holiday season. My grandma used to buy a lot of grapes during the BER months and placed them on our table along with other fruits.
