My Version of Potato Pan Pizza


Potatoes play an essential role in our favorite Filipino dishes. We use them for our Picadillo, Caldereta, Mechado, Menudo, and even our all-time favorite Adobo! Then there is our go-to snack… Fries! And of course our favorite side dish, the Mashed Potato.  It is such a vital part of our daily meals, don’t you agree?

Did you know that you can also use potatoes to make bread and pastries? Aside from having a much richer flavor than using regular flour, the bread made from potato is much softer and fluffier. 

Potatoes can be used in a lot more ways than what we are accustomed to. They come in so many forms aside from fresh. Here in the Philippines, Potatoes USA also markets U.S. frozen and U.S. dehydrated potatoes.


Potatoes can accommodate a host of flavor profiles, thus are useful in so many dishes and cuisines. Boiled, fried, baked, steamed, there is no limit to your cooking creativity when it comes to potatoes!




Tater Tips and Tricks 


I have learned that putting your peeled potatoes in cold water with a bit of lemon juice or vinegar will avoid it from turning brown. Cold water prevents discoloration and will allow you to use your peeled potatoes at a later time. But don’t leave it there longer than two hours if you want to retain the water-soluble vitamins. 


Also, you should avoid dropping your potatoes in boiling water. Aside from accidentally scalding your skin from the hot splash, the outside part of potatoes will cook faster resulting in unevenly cooked portions. When boiling potatoes, always place them in the pot while the water is still cold and allow it to boil together with the water. That makes for yummier, evenly cooked taters!


Super Nutritious Spud


Potatoes are mostly being compared to rice due to its “high” caloric content, but studies show that one serving of potato (148g) only has 110 calories, much lower than a serving of white rice and pasta. It also contains 26g of COMPLEX carbohydrates.  Now, we all know that carbs are the main fuel for the brain, so it is not advisable to cut that from our diet.


Potatoes are nutrient-dense and are an excellent source of Vitamin C that helps strengthen the immunity, exactly what we need during the pandemic. Not only that, potatoes are also a good source of potassium, protein, fiber, and Vitamin B6, among others.


U.S. Potato Pan Pizza Recipe


I’m excited to share with you my latest potato recipe. I used top-quality U.S. potatoes, of course. It’s so easy to prep, tasty, and I guarantee that your whole family will enjoy it!




Ingredients


1/4 cup cooking oil

3 pcs large fresh U.S. Russet potatoes, julienned

1 tsp sugar

2 tbsp corn kernels

1/2 cup bacon, chopped

2 sausages, sliced

1 cup mushroom, sliced

1 medium bell pepper, sliced

1 medium onion, sliced

2 large eggs, beaten

1 cup cheese, grated


Pineapple tidbits (optional)


Preparation/Procedure:


1. Add sugar to the potatoes. Stir fry for 2-3 minutes in medium-low heat. 

2. On a mixing bowl, combine the remaining ingredients (corn kernels, bacon, sausage, mushroom, bell pepper, and onions). 

3. Add the eggs to the mixture followed by the potatoes. The eggs will help hold the mixture together. 

4. On a small, hot frying pan, add cooking oil, then put enough of the potato mixture.

5. Then add grated cheese on top of the mixture. Cover the pan to melt the cheese.

6. Cook for 2-3 minutes to create a flat base or until the cheese is melted.

7. Once cooked, you can slice it and serve while hot!


U.S. Potatoes in the Philippines


I only trust U.S. potato products for my potato needs. Fresh U.S. potatoes (which is also referred to as table-stock potatoes) are not available in the Philippines year-round, but I make sure to get them when they are in stores. 


You can also enjoy U.S. frozen potatoes. You can find them in the frozen aisle of the grocery. They taste great, btw, and are so easy to cook.

A quick trip down holiday memory lane

  Can you feel it? The cold breeze, holiday songs, festive decorations, and colorful lights and lanterns… it’s Christmas season, everybody!
